We visited a Sushiro pre-tasting session with Kiyoaki (@kiyoaki_gohan), a chef who is currently on a diet program on his YouTube channel "Kiyoaki Shokudo."

First up is a parfait where you can enjoy two kinds of sweet potatoes: purple yam and beni haruka sweet potatoes!
Purple yam is also used in the mousse.
